Pesto alla Genovese (Genoa style)

Ingredients for 4 people
  • 50 grams basil leaves
  • 1 garlic clove
  • 40gr Parmesan cheese
  • 1 handful of pine nuts
  • 40gr Pecorino cheese
  • 1/2 spoon salt
  • 200ml Light Fruity EVO Oil
Preparation
  Pound the garlic clove with a handful of line nuts and half a spoon of grinded salt, basil leaves, Parmesan cheese, Sardinian Pecorino cheese  and half of the  extra virgin olive oil.
Pound all these ingredients by hand adding slowly the remaining oil until you obtain a ligh green paste ready to dress pasta or other dishes.

Throughout the decades, the Canino Olive Oil Cooperative has selected the oil only from among the top cultivators of this type of olive, thus reaching an outstanding result quality wise.
