Destructured pizzaiola sword fish

Ingredients for 4 people
  • 500 grams tomatoes
  • Tabasco
  • Carrot
  • Pieces of sword fish
  • 1 clove of garlic
  • 100 grams of isinglass
  • Capers
  • Oregano, salt and pepper
  • Medium Fruity EVO Oil
Preparation
Place isinglass into cold water.
 Peal and take away seeds to tomatoes.
Put all ingredients ( tomatoes, carrot, capers, oregano ) on the fire , except the isinglass, and let it cook for 5 minutes. Take away from fire, mix everything and add the isinglass with three drops of Tabasco.
Let all pass through a thin drainer.
Fill the molds and put them into the refrigerator.
Cut the sword fish into thin slices.
Oil the plates and place the sword fish slices. Place a caper on top of each of them, add salt, pepper, oregano and dress by pouring some medium fruity extra virgin olive oil; insert in the microwave oven and let it cook for 15-30 seconds.
At the center of each plate put some tomato glee  and  spread some vegetable mixture on top of everything.
